Bellin Memorial Hospital in Green Bay, Wisconsin, needed to move its entire cafeteria from the 3rd to the 5th floor, which provided the foodservice team an opportunity to modernize their operation and introduce customizable, made-to-order foods to their menu.
The Challenge
As the maternity department at Bellin Memorial Hospital expanded, the hospital cafeteria needed to relocate, and the team was excited to update their operation. Their current setup was outdated, and wasn’t serving the hospital’s patients, visitors, or staff as well as they’d like. The space was designed for hot-holding batch-cooked food items, which offered little opportunity for customization. And, the batch-cooking process required them to close for hours between meal times, which was a major inconvenience to their guests. They hoped to find a way to provide a fast, efficient, and creative selection of made-to-order items so that they could serve fresher, better food all day long.
